There's some old interview footage with Mark Hamill saying that Lucas insisted that the fighting style in the OT be like old medieval knights with swords you had to lift with two hands, King Arthur style.
They have the display hilts which are the nice looking ones that just hang on the belt or get handed between characters in close up, and then they have the functional stunt hilts which are basically just tubes painted with the grips and buttons, so it was easier to grip during the fight scenes. I saw some prop hilts at the recent SW costume exhibit in NYC. The look stuck because lightsabers became instantly iconic, and since apparently lightsaber-making knowledge was pretty much lost by the time ANH takes place, the design needed to extend back in time to the prequels.
